Blueberry Natural from Colombia

This Castillo grows on Finca La Sirena near Armenia in the Colombian department of Quindío at 1,420 m above sea level. Juan David Puerta's 23-hectare farm boasts nutrient-rich soils and offers excellent conditions for producing high-quality specialty coffee.

After careful harvesting, only ripe coffee cherries are selected. The cherries are then fermented for 12 hours in sealed bags. Afterwards, they are fermented together with fruit syrup and glucose for another 72 hours in closed containers until a Brix value of 60 degrees is reached.

In this so-called osmotic dehydration, the concentration difference creates an exchange between the coffee cherries and the surrounding liquid. This gives the coffee its particularly intense, fruity, and sweet flavor profile.

Drying takes place in two steps. First, the coffee cherries are dried on mobile drying roofs under direct sunlight until they reach a moisture content of about 25%. Subsequently, drying continues in a mechanical silo until the final moisture content of about 10 to 11% is achieved.

The entire drying process takes between five and seven days. After drying, the coffee stabilizes in storage for at least 15 days and is then packed in GrainPro and sisal bags.

Sens Coffee – Juan David Puerta

Juan David Puerta gained extensive experience in the coffee industry early on, working with various coffee farmers and exporters.

After numerous experiments, he developed his own processing method in 2021, with which he could produce particularly consistent and intense cup profiles. The positive feedback from his customers encouraged him to found his own company, Sens Coffee.

Since then, Juan David has been developing modern fermentation and drying processes that allow him to reinterpret classic Colombian varieties like Castillo in a completely new way.

His Blueberry Natural combines the natural sweetness of Colombian coffee cherries with an exceptionally fruity profile. The result is an intense filter coffee with distinct notes of blueberry, blackberry, cherry, and chocolate – developed for all who enjoy discovering coffee beyond classic flavor profiles.
