About five years ago, the TOSTΛDO adventure began with just one person: Fabi. After numerous attempts and many kilos of coffee beans consumed on the new portafilter machine, the first miracle happened: a drinkable espresso was made.
The next success came when Fabi started roasting coffee himself. The tempting aroma of gently roasted coffee beans also captivated his wife Sonja and made her a coffee lover. Thus the TOSTΛDO team was born, which wants to spread the joy of good coffee.
After a successful start at the beginning of 2018, things went steeply uphill for our small roastery! The small Huky roaster, which could only process 1 kg of coffee per hour, quickly proved to be too small. Despite the rapid growth, we did not expect that Fabi would spend a full 30 hours behind the roaster in the first few months to produce 30 kg of coffee.
In the summer of 2018, the hoped-for salvation finally came in the form of the new roaster Emma, which could process 10 kg per hour. This gave us a few months' respite, but by the summer of 2019 it was already clear: Emma was also getting too small and there simply wasn't enough time! In addition to the "machine offspring" in the roastery, Sonja and Fabi also had their third child.
In order to continue to guarantee the usual quality of TOSTΛDO coffee, we decided to put the responsible roasting in the hands of the coffee roaster "chicco di caffe". Chicco di caffe roasts our green coffee in Bad Aibling gently and according to our recipes on a Loring, the Porsche of roasting machines.
With three children and Fabian returning to full-time work as a pilot after COVID-19, the important tasks of green coffee selection, roasting orders and shipping were handed over to our main green coffee dealer Col-Spirit. We now work with various roasters from the specialty roasting scene to produce our coffees.
The Col-Spirit team will lead TOSTΛDO into the future as a roasted coffee project, with the aim of further strengthening the connection between coffee enthusiasts and producers.
