Yeison and Yesenia, two passionate siblings and second-generation coffee farmers, took over their farm in 2019 and rebuilt it from the ground up. With great dedication and an eye for detail, they have since perfected every stage of production: from timely fertilization and precise fermentation to gentle drying.
The result is a coffee that delights us anew with every tasting. After careful hand-harvesting, only the ripe cherries are selected, fermented for 120 hours at cool temperatures in GrainPro bags, and then turned on the patio up to six times a day. This process creates a clean, elegant coffee with an expressive, consistent profile.
Flavor profile:
Complex aromas of chocolate, ripe red fruits, and floral notes, rounded off by a delicate honey sweetness. On the palate, notes of chocolate, red grape, blueberry, and cherry unfold. A lively, mandarin-like acidity lends freshness, while the medium body is creamy and chocolatey – when chilled, it reveals a wonderfully silky texture.
