Ethiopian Heirloom from Colombia

This variety is considered a specialty crop even among Colombian specialty coffee growers. It grows on the La Clarita farm in Huila at an altitude of 1,780 meters above sea level. From there, José Giraldo transports it overnight to his processing plant in Armenia, Quindío.

During the overnight crossing, the first phase of fermentation begins – 12 hours aerobically. The cherries are then fermented anaerobically for another 96 hours in sealed tanks under controlled temperature conditions – in a specially designed cold storage facility. José monitors the pH level every six hours to determine the ideal time to stop the fermentation.

The drying process is carried out naturally on raised beds in his greenhouse – 100% sun-dried.

José manages several family farms and selectively buys coffee cherries – especially varieties he doesn't grow himself. Over the years, this has made him a true expert in fermentation for exotic varieties.

With his cold storage facility, he manages to control fermentation processes with a precision and longevity that is virtually unmatched. He consciously rejects co-fermentations – out of conviction. For him, the focus is on the original potential of each individual variety, which he aims to fully develop through targeted processing.
And with great success – large quantities of his coffee are shipped to Asia via air freight. Naturally, for quality reasons, everything is packed in 24kg vacuum boxes.
