After studying food engineering, Juan David initially gained experience at various green coffee producers and exporters. Instead of permanently settling into existing structures, however, he decided to apply his expertise to his business. He rented space on a farm, sourced fresh coffee cherries, and has since focused entirely on unusual processing methods. These include osmotic dehydration with natural flavors and fermentation with koji fungus—two processes that break new sensory ground.

What makes Juan David particularly likeable is his open, honest approach. While some producers keep their methods secret or only selectively disclose information, he stands by his processes – transparently, without marketing platitudes.
