Geisha from Herrera, Tolima
This special Geisha variety grows on Finca Buenos Aires in Herrera, in the Colombian department of Tolima, at 1,980 m above sea level. The eight-hectare farm belongs to the family of Israel Hernández, who comes from a traditional coffee farming family.
The ripe coffee cherries are carefully hand-picked and first sorted in water. Cherries with too low a density float on the surface and are removed. Afterwards, the whole cherries oxidize for 24 hours at room temperature. During this time, the natural activity of the existing microorganisms already begins.
Then, the cherries are de-pulped and fermented for another 45 hours together with the still adhering mucilage. This controlled processing particularly highlights the characteristic profile of the Geisha variety.
Drying takes place in so-called Marquesinas and can last up to 15 days, depending on the weather conditions. During drying, the coffee is regularly checked and carefully sorted. Once a moisture content of about 10 to 11% is reached, the coffee is packed and stabilized for one month in a cool, well-ventilated place.
Israel Hernández – Passion for Exceptional Specialty Coffee
Israel Hernández comes from a traditional Colombian coffee farming family. Finca Buenos Aires belongs to his wife and is managed by the family with great care.
The Geisha variety occupies a significant portion of the farm with around 3,000 coffee trees. Due to the excellent results, Israel has now also planted other special varieties such as Pink Bourbon and Papayo on the farm.
His coffee has already impressed in various national and international competitions. Among other achievements, he secured fourth place in a competition in 2020, seventh place in 2023, and tenth place at the international fair "Tolima Corazón Cafetero". Furthermore, the coffee was awarded at the Cup of Excellence and reached fourth place in a Barista competition in the USA.
With his experience and meticulous work, Israel accompanies every phase of production – from selecting the ripe coffee cherries to controlled fermentation and slow drying. The result is an exceptionally floral and complex Geisha with a clear and elegant cup profile.
